The "Kad Herres" (clay pot) Olive Press is located in Carmey Har Hanegev Farm which is built on the ruins of a Nabatean farm and recreates the agriculture of ancient times. The Olive Press was established in 2013 and is the only service provider to olive growers in the Negev Highlands and Mitzpe Ramon.
The oil is produced in a cold pressed process with machinery that produces high quality oil from the olives grown in the special climate of the high Negev Highlands.
There is a visitors' center where you can get a tour around the press and hear about the production process while tasting the original olive oil, and of course the option to purchase the products of the olive press and farm, such as quince liqueur, limoncello, organic jams, olives, wines from wineries in Ramat Negev, natural spices and more.
The olive oil produced is from carefully selected varieties suited to the climate and environment of the Negev Highlands.Olives are grown at an altitude of 800 meters above sea level on Nabatean terraces and yield quality olives.
The press is located adjacent to olive groves and pressing the oil begins with little delay as possible and as soon as the harvest is complete since the transfer time of the olives to the mill affects the quality of the oil.
